The holiday season is one of the busiest times of year. We’re all rushing around to holiday parties, family get-togethers and braving that crazy mall parking lot to buy our loved ones gifts. With so much going on, staying healthy and eating nutrient rich meals is probably not at the top of the priority list. But, what if we could have our cake and eat it too? Or, in this case, chocolate mousse? This Chocolate Peppermint Avocado Mousse is made with only 5 simple ingredients and can be prepared in less than 15 minutes. It’s drool-worthy enough to trick any junk food addict into thinking this is yet another unhealthy holiday dessert, yet chock full of nutrients and a quick and easy no-guilt holiday treat! Ingredients: 3 avocados 1/2 cup + 2 tablespoons unsweetened cocoa powder 2 tablespoons almond butter 1/4 cup + 1 tablespoon grade B maple syrup 1/2 teaspoon peppermint extract Instructions: In a large bowl, mash avocados. Add remaining ingredients and blend gently. With a hand mixer, combine all ingredients until smooth. Garnish with a sprig of mint (optional). Enjoy!
