Lemon Cashew Cherry Protein Muffins with a Turmeric Apricot Chia Jam

Vegan, Gluten free, No added sugar
Time: 1 hour
Makes 6 servings

Muffin Ingredients:

  • 2 flax eggs
  • 4 cups almond flour
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup cashews
  • 1 tsp baking soda
  • ¼ cup lemon juice, freshly squeezed (about 3 lemons)
  • 1 cup almond milk
  • 2 tbsp. lemon zest
  • ½ cup sliced cherries
  • 2 Lemon Cashew Rise Bars

Jam Ingredients:

  • 2 cups apricots, pitted
  • 3 tsp turmeric
  • 1 tbsp. cinnamon
  • ½ cup chia seeds
  • ¼ cup water

Muffin Directions:
1) Combine 2 tbsp. flax seeds with 6 tbsp. water to make 2 flax eggs. Set aside for 5 minutes.
2) Zest and juice lemons and add juice to flax egg mixture
3) Add almond milk, vanilla extract, baking soda, salt, and mix together
4) Add almond flour to mixture and stir until well-combined
5) Gently fold in sliced cherries, cashews, and lemon zest
6) Place mixture into lightly greased muffin pan
7) Bake at 350°F for 25 minutes.
8) Let cool for 30 minutes before topping

Jam Directions:
1) Wash and pit apricots
2) Add apricots to large sauce pan on medium heat
3) Add turmeric and cinnamon and stir for 2 minutes
4) Use potato masher to gently break apart apricots into small pieces
5) Add ½ cup chia seeds and ½ cup water
6) Continue to mash until apricots are all broken apart
7) Bring to a boil and simmer for 15 minutes
8) Once cool, add 2 tbsp. of jam to the top of the muffin

Rise Bar Crumble Directions:
1) Microwave 2 Lemon Cashew rise bars for 1 minute until soft
2) Crumble into small pieces
3) Mix with ¼ cup chopped cashews
4) Add 1 tbsp. lemon zest
5) Stir all ingredients
6) Add ¼ cup of mixture to top of muffin
